    How Do You Store Vegetables to Keep Them Fresh Longer?

Potatoes want 7°C to 10°C, dark and dry. Onions and garlic want to be cool and very dry, not cold and humid.

    The mistakes that cost the most

    • Storing tomatoes in a fridge. Below 10°C they go mealy and lose flavour, permanently.
    • Washing before storage. Surface water on leaves and roots invites rot. Wash at the point of sale instead.
    • Piling produce deep. The bottom layers bruise and heat builds in the middle of the pile.
    • Mixing bananas or mangoes with greens. Ethylene from ripening fruit makes leaves yellow within a day.
    • Leaving harvest in the sun while you finish picking. Field heat is the largest single cause of loss.
