How Do You Keep Meat Cold Without Electricity?
Meat is the least forgiving product in any cold chain. Vegetables wilt when they get warm, but meat becomes unsafe. Bacteria that cause food poisoning multiply fastest between 5°C and 60°C, which means every hour a carcass, a cut, or a tray of chicken spends warm is an hour of lost shelf life and rising risk.

What temperature does meat need?
Fresh meat and poultry should be held at 0°C to 4°C. That is the band that keeps bacterial growth slow enough for meat to stay safe and saleable. Above 5°C the clock speeds up sharply. At room temperature in Kigali, roughly 25°C, unrefrigerated meat can move from fresh to questionable within a few hours.
- Fresh beef, goat, and pork: 0°C to 4°C, used within a few days.

Why the usual options fall short
